I wish you could all smell the sweet vanilla sweeping through my home as I bake this wonderful granola! It's uplifting on a dreary, rainy day like today. I was given this recipe from my friend Stephanie who is an amazing mom and cook, and I must say this is one recipe I make often (and I know some of you already do too!). Give it a try, and you'll see why!
Ingredients:
4 cups old-fashioned oats
1 cup nuts (almonds, pecans, walnuts - chopped to your desired size)
1/2 cup packed golden brown sugar
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/3 cup vegetable oil
1/4 cup honey
2 Tbsp sugar
4 tsp. vanilla extract
Instructions:
Position rack in middle of oven and preheat to 300 degrees Fahrenheit. Lightly spray large baking sheet with nonstick spray.
Mix first 5 ingredients in large bowl. Combine oil, honey, and sugar in small saucepan; bring to simmer over medium heat. Remove from heat; stir in vanilla. Pour hot liquid over oat mixture; stir well. Toss mixture until thoroughly mixed.
Spread granola on prepared baking sheet. Bake until golden brown, stirring occasionally (I usually stir twice), about 30-40 minutes. Transfer sheet to rack; cool granola completely.
Store in airtight container at room temperature for up to 2 weeks.
