Ok, I called it SpinArt in the spirit of 1990's craft time. I know this is incredibly not healthy but man! You will be the life of the party. Yum.
1 can whole artichokes
1 8oz pkg of softened cream cheese
2 T minced garlic
2 T butter
1 C chopped spinach (fresh)
1 ½ tsp black pepper
1 tsp salt
½ tsp cayenne pepper
½ C parmesan cheese (powder stuff) taste it and see if there’s enough… I like it with a lot of parmesan in it so you can decide how you feel with just ½ C.
¼ C mayo
2 T milk (optional)
On the stove, sauté spinach with butter for like 2 minutes on medium heat. Add artichokes and cook for 2 more minutes. Add garlic and cook for like 1 minute. Add softened cream cheese and continue stirring until melted and everything’s all mixed together. Add salt, pepper, cayenne, parmesan cheese and mayo. I add a drop or so of milk if the consistency is too thick. Make sure the heat’s not too high otherwise it separates and it’s all weird. I cook everything very slowly.
